Bacon-wrapped Chicken Drumsticks

Ingredients
- 8 chicken drumsticks
- 8 rashers of bacon
- 1 garlic clove
- ½ tbsp olive oil
- 1½ tbsp lemon juice
Method
- Heat oven to 200°C.
- In a bowl whisk together the olive oil, lemon juice and minced garlic.
- Prick the chicken legs a few times with a sharp knife and brush or spoon over the lemon juice mix.
- Wrap each leg with one rasher of bacon, and lay in a baking tray that is either non-stick or sprayed with olive oil.
- Drizzle the rest of the lemon juice mixture over the top.
- Cook for 45 minutes, or until chicken is thoroughly cooked and bacon is crisping.
- If you like very crispy bacon, cook for an extra few minutes under a very hot grill.
